Avocado, cheese and egg on whole wheat toast

AVOCADO, CHEESE, AND EGG ON WHOLE WHEAT TOAST
INGREDIENTS:
- 15ml x canola oil
- 2 x eggs
- 2 x whole wheat slices of bread
- 2 x cubes butter
- ½ x avocado
- 5ml lemon juice
- Salt and pepper to taste
- 30gr grated white cheddar
METHOD:
- In a medium pan with a little canola oil, fry the eggs to your liking. (poached or boiled eggs will also work)
- Toast the bread and butter
- Mash the avocado with a squeeze of lemon juice and a pinch of salt and pepper.
- Spread over the toast.
- Top with cheese and eggs
- Serve whilst warm.
